It was our roaster's dream to roast a coffee from this incredible region. Ethiopia is the origin of coffee and still remains arguably the most special place to source from due to the unique flavours that are found here. Specifically in the Kochere region of Yirgacheffe, the coffees are delicate and tea-like, which means a paper filter is required to bring out the special qualities that are present. This roast is a classic representation of Kochere with tasting notes of peach, black tea and floral aromatics.
Method: Paper Filter 16:1 ratio of water to coffee, e.g. 352 grams of water to 22 grams of coffee
